O amponêsagricultor dispõe de um conhecimento acumulado por gerações e ninguém melhor do que ele próprio sabe seleccionar as sementes adaptadas às suas próprias condições. Sementes e camponeses são palavras quase sinónimas. Normalmente, o agricultor satisfaz a sua necessidade de sementes a partir de várias fontes. Parte das sementes é seleccionada do grão produzido; outra parte é comprada ou trocada com familiares e vizinhos; e outra parte ainda é semente certificada, comprada na loja e proveniente de companhias de sementes. O hábito de utilizar várias fontes de sementes também tem como objectivo "jogar" com as incertezas climáticas. Por exemplo, uma variedade pode ser mais adaptada à seca enquanto outra pode ter melhores colheitas quando a chuva é abundante.
