For instance, the average per capita annual sorghum consumption in major sorghum growing areas is more than 75 kg. Global prices for agricultural commodities have risen dramatically in recent years, making agriculture an attractive investment once again. Industrial demand of sorghum as substitute/compliment of wheat to produce composite flour as well as high energy foods by flour mills and the beverage companies have increased the industrial demand for grain sorghum. It also has higher micronutrients (Fe and Zn) than other cereals like maize, rice and wheat, making it a more healthy food.
